METHOD:

2. Rub the chicken with the Jerk seasoning.
3. Be sure to rub under skin and in cavities
4. Marinate overnight.
5. Grill at lowest possible setting over a low fire until done. Or bake at 350 degrees for 35-40 minutes covered with foil.
6. Pimento (all spice) branches (this is what is used in Jamaica) mixed with charcoal is best. If not try to use an aromatic wood in the barbecue grill to enhance the flavor.
7. Chop meat into pieces, and serve traditionally with hard-dough bread
Jamaican Jerk Chicken
Well, there are lots of variations to the jerk chicken recipe, but I find the ones that call for the chicken to marinate taste better than those that just call for a jerk spice rub. So here's one.
Ingredients:
3 fresh scotch bonnet or habanero peppers
6 scallions, coarsely chopped
3 shallots, quartered
3 cloves garlic, smashed
1 inch fresh ginger, peeled and chopped
3 tablespoons fresh thyme leaves
2 teaspoons ground allspice
1 1/2 teaspoons black pepper
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground cloves
1/4 cup vegetable oil
8 whole chicken legs, thighs and drumsticks separated
1. Discard stems, seeds, and ribs from 2 chiles and coarsely chop.
2.Coarsely chop remaining chile including seeds (for a less spicy dish, seed half of chile before chopping).
3. Blend chiles with remaining ingredients except chicken in a food processor until a paste forms. 4. Cut several 1-inch-long slits in each piece of chicken, then rub paste all over chicken, rubbing it into slits.
5. Marinate, covered and chilled, at least 2 hours or up to 1 day (longer is better for flavour).
6. To cook chicken on a charcoal grill: When charcoal turns grayish white (15 to 20 minutes from lighting) and you can hold your hand 5 inches about top rack for 3 to 4 seconds, grill chicken, skin sides down, on portion of lightly oiled grill rack with no coals underneath, turning occasionally, until cooked through, 20 to 30 minutes.
7. If you aren't able to grill, you can roast jerk chicken, skin sides up, in 2 large shallow flameproof baking pans (1 inch deep) in upper and lower thirds of a preheated 450°F oven, switching position of pans halfway through roasting, until cooked through, 25 to 30 minutes.
Then turn on broiler and broil chicken, about 4 inches from heat, until skin is browned and crisp, 2 to 3 minutes.

How do you cook jerk chicken in the oven?
I need a recipe for Jerk chicken that is not spicy and not too sweet. I don't want to leave out any ingredients but rather substitute them with some thing that will be a good compliment to the recipe and still make it really flavorful. If you know the recipe to the jerk chicken wings at Bahama breeze that would be great. ALso I'm using drummettes
Use this procedure except use jerk seasoning. I do htis all the time'
Here is the jerk seasoning recipe:
Bahama Breeze's Jamaican Jerk Grilled Chicken Wings Recipe
**Jerk Marinated Chicken Wings***
3 tablespoons Garlic, chopped
1 tablespoon Thyme, fresh chopped
1 teaspoon Allspice, ground
1 cup Water
1/8 cup Scallions, sliced
5 pounds Chicken Wings whole, thawed
Jerk Seasoning (Dry) as needed
***Jamaican Marinade***
1/4 cup olive oil
2 tablespoons Jamaican Jerk seasoning.
1/4 cup orange juice
1/4 cup rice wine vinegar
1 tablespoon dark Jamaican rum
1/2 cup chopped red onion
1/2 teaspoon creole seasoning
2 green onions, chopped
1 lime, juiced
2 cloves garlic, minced
1 scotch bonnet or habanero pepper, seeded and minced
Directions:
Marinating Preparation: Add the jerk marinade, garlic, thyme, allspice, water, and scallions in a large bowl and mix well using a whip to evenly combine the ingredients. Add the chicken wings to the marinade, cover with plastic wrap and place in the refrigerator on the bottom shelf.
Make sure the chicken wings are fully thawed this helps the chicken to fully absorb the marinade. Marinate the chicken wings for 18 to 24 hours before cooking. The longer the marinating time, the more flavorful the wings will become.
Cooking Preparation: After marinating is complete, remove the wings from the marinade and place in a clean bowl. Lightly season the wings with the dry jerk seasoning and lay on a sheet pan with the wing tips face down. Bake the wings at 350A F for 20 a 25 minutes or until fully cooked. Remove from the oven and place in the refrigerator to chill to 40A F. Tips Make sure the wings are drained well after being removed from the marinade or the seasoning will not fully adhere to the wings. The wings are cooked with the wing tips face down, to allow more even cooking and removal of excess fat from the chicken skin. By pre-cooking the wings this prevents flare-ups on the grill during the final grilling procedure
Grilling Preparation: Heat your gas or charcoal grill to medium heat. Place the chilled wings on the grill and grill for 2 1/2 – 3 minutes on each side. The skin of the wings should develop a crisp texture and a mahogany like color. Make sure the wings are fully heated to 165 F. Serve hot with your favorite beverage.
Wings can also be placed on the grill directly from the oven to express the cooking process. Allspice or pimento leaves can be placed on the grill during the grilling process to give the wings a light smoked flavor.
Jamaican Marinade: Slowly add the olive oil to the jerk seasoning stirring with a wire whisk. Add all remaining ingredients; stir. Refrigerate. Marinade poultry or meats for 3 hours, and fish or seafood up to one hour.

How many pounds of chicken does a rotisserie chicken yield?
I am going to make chicken tamales. The recipe calls for 1 1/2 large rotisserie chicken. I have 6 lbs of chicken breast in my freezer I recently bought. How many pounds of the breast do I use to equal 1 1/2 rotisserie chicken?
Cherise, a run of the mill chicken fryer weighs about 3.5 pounds, and contains 1/2 pound of skin and bones. So you would expect about 3 pounds of meat from an average fryer.
I would suggest that you use 4.5 pounds of chicken breast in this recipe. That will make a lot of tamales.
Regards,
Dan
