COCONUT DROPS
Coconut Drops is A Favorite Jamaican treat that happens to also be a healthy way to indulge your sweet tooth. It is also quick to make and a fun treat to make with the kids.
Coconut offers many health benefits including weight loss, heathy hair, and clear skin. It is also an old and very effective remedy for eliminating intestinal parasites. Egg whites, as you may know, is a good source of protein.

Coconut Drops Recipe
Ingredients
- 1/2 lb. of desiccated (shredded or flake-dried) coconut (8-10 oz. bag)
- 1 1/8 cups of Sugar (1/8 is approximately 2 tablespoons)
- 3 egg whites
- Rice Wafer Paper or Wax Paper
Cooking Instructions. Beat the whites of the eggs to a stiff froth, then add the sugar and coconut.
Place teaspoon sized lumps of the mixture on the rice wafer paper, and bake in 400 degree oven for approximately 10 minutes or until golden brown.
What is Desiccated Coconut?
WiseGeek.com explains that desiccated coconut is coconut meat that has been shredded or flaked and then dried to remove as much moisture as possible.
There are a number of different styles of desiccated coconut used around the world, and availability of this coconut product varies, depending on the region where one is shopping.
If desiccated coconut is not available, regular dried coconut can be used as a replacement, although dried content tends to have a higher moisture content, despite the “dried” in the name.

Curried meats keep longer than meats prepared in other ways.
Here’s a TIP: If you want to keep some of the Hamburger Steak Curry below for few days, prepare it dry ( (without much gravy). Then place the dry curried steak crumbs in a little jar and it will keep for days. Or, you can just take it to a picnic or on a trip for making quick fun, delicious, and healthy sloppy joe sandwiches.
Jamaican Beef Patty Recipe
Ingredients
- 1lb Chopped Hamburger Steak
- 1 cup minced onions
- 2 teaspoonfuls of curry powder
- Pre-prepared pie-crust,(the dough shouldn’t be too heavy; it should be more like paste)
Cooking Directions. Stir-fry together the steak, minced onions, and curry powder.
When these are quite brown simmer with a little water until onions are soft. You can choose to make it dry or with plenty of gravy, depending on how you like your patty. (I like mine dry–which means, very little gravy).
Roll out the pasty pie-crust dough and cut out circles that are about 3 inches in diameter.
In each of these circles place a tablespoonful of the curried hamburger steak meat, and fold it over, as you would if you were making a turnover. Then, using a fork, press the edges closely together.
Fry or bake in 350 degree oven until golden brown. Brush with egg-white mixture to give it a deep and even golden color.

Hi Chef Mark! I love your site and I wish I could visit to taste your delicious looking food! I live in the Caribbean, but I had never made Jamaican Beef Patties before. I’ve bought them ready made though. My cousin in Orlando sent me the link to your recipe and I gave it a try….YUM!! I made my own crust though. Thanks for sharing and I will definitely visit next time I am in Orlando.
